Ingredients

6 large eggs

½ cup cottage cheese (whole milk)

½ cup shredded cheddar cheese

3 breakfast sausage links, cooked and chopped

Salt and pepper to taste

Cooking spray or oil for muffin tin
Instructions

Preheat oven to 350°F (175°C).

Lightly grease a muffin tin or line with silicone cups.

In a blender, combine eggs, cottage cheese, and shredded cheese. Blend until smooth.

Stir in chopped sausage and any optional veggies.

Pour mixture evenly into the muffin tin (fill each about ¾ full).

Bake for 20–25 minutes, or until centers are set and tops are lightly golden.
